SPICY MANGO SALSA (THIS HAS BEEN POSTED BEFORE BUT REPRODUCED BELOW TO SAVE SEARCHING)
1 large bright mango chopped into small cubes.
1 large red chilli or any chillies of your choice
2 shallots finely diced
juice and zest of 1 lime
pinch of sugar or sweetener (Opt.)
Small bunch of coriander chopped
1 Tsp ginger garlic paste (Opt)
1 tin of white crabmeat (or fresh if you are feeling flush)
3/4 iceburg lettuce cups
Chopped cherry tomatoes
half a chopped red onion
Mix all the ingredients together in a bowl and leave to marinade until ready to serve.
Just add the lime juice and zest a bit of time and adjust quantities to your liking.
Serve in lettuce cups
Top tip: To create perfect lettuce cups slice an iceburg lettuce in half (not the stalk way) and hold cut side up under cold running water. Let water fill the lettuce half and the leaves should come away leaving perfect cups.
