Jumping Jack & Cola Chicken

This recipe is loosely based on The Slimming World Diet Cola chicken recipe but just with a cheeky little bourbon hit. I served mine with Gluten free fusilli pasta but it would go nice with brown or white rice.

INGREDIENTS

 

3-4  chicken breasts or thighs– cut into strips

330mls of diet cola

Small glass of bourbon (approx. 100ml)

6 tbsp of passata

1 chopped onion

1 tbsp crushed garlic

1 tbsp finely chopped ginger

1  chicken stock cube

3 Tbsp white wine vinegar

3 tbsp Worcester sauce

1 tbsp of sweetener

2 dried red chillies crushed

1 tsp dried mixed herbs

1 Red pepper

1 heaped tbsp. cornflour with a small amount of water

 METHOD

Brown off chicken and remove from pan

Add onion and brown off, add garlic and fry for a couple of minutes

Add the bourbon and fry for a few minutes to cook off the alcohol.

Add the cola, the passata, stock cube, vinegar, Worcester sauce, sweetener and chilli, dried herbs
Add any stir fry veg (ie red peppers)

Add cornflour and water a bit at a time

Let it simmer for 20 mins,

Return cooked chicken to the pan and continue to simmer until chicken cooked through.

Add a little bit of sweetener to taste if required

Serve with pasta and a cheeky glass of Jack and you will have a smile on  your face.
