Funky and Flavorsome Squishy Squash and Black Bean Cajun Wraps

Great little lunch served with a big salad or nibbles when you have friends around.  My nod to a Joe Wicks a recipe I saw on Sunday Brunch last week.  I’ve changed it to Cajun and made it less calories but they are just as tasty .  Really easy as well.

Servings 2 (that’s a double portion in the picture)

Slimmingworld Syns = Approx 1 if using your Healthy A and B

INGREDIENTS

½ small butternut squash, peeled and chopped

4 spring onions including the green tops, finely sliced

Juice of half a lime

Salt and pepper

Spray oil

2-3 cloves garlic, crushed

½ x 400g tin of black beans, drained and rinsed

1.5 tablespoons of Cajun Seasoning, (check Syn values, some are free some are a Syn per tablespoon)

2 wholemeal tortilla wraps,  (Weight Watchers or BFree wholegrain are part of Slimmingworld Healthy B, others vary widely on Syns so just do your research)

30-60g cheddar finely grated, (2 x Slimmingworld Healthy A)

1 drizzle of your favourite chilli sauce, I like the green or red Siracha (1 tablespoon is 1 Syn)

METHOD

Put the butternut squash in a large microwaveable bowl with 1 tablespoon of water. Cover with cling film, then zap on high for 8 minutes until cooked.

Spray a large frying pan with low cal oil and heat over a medium flame. Add the spring onion and the garlic. Fry for 1 minute, then tip in the black beans and Cajun seasoning. Give everything a good stir and cook for 2 minutes more.

Tip the bean mixture into the butternut squash bowl, which by now should be cooked.

Mash everything together with a fork.

Squeeze in the lime juice and season with salt and pepper.

Put the pan back on a high heat. Place the first tortilla in the pan and pile the butternut and black bean mixture on top.

Grate over the cheddar, then drizzle with a little chilli sauce and put the other tortilla on top.

 

Turn the whole thing over and brown the other side, go on be brave.

 

Cut in triangles and serve with a large salad. Makes a nice change for lunch.
