Heavenly Healthy (ish) Chocolate Brownies with a Quirky Quarky Chocolate Frosting.

Seriously these are not just for chocolate monster slimmers, they are an all round winner for all the family. Here is a great way to get your chocolate fix without all of the fat and sugar.  This is a slight adjustment to the Slimming World brownies and they have been really popular with slimmers and lucky non slimmers alike.  From my calculations these come out at roughly 1.5* Slimming World Syns each if using the extra bit of sugar rather than sweetener or roughly 0.5* Slimming World Syns if using all sugar.  Truth be told I had run out of sweetener which is why I made it up with caster sugar.  Realistically they are less Syns than the Hi-fi Slimming World bars and a much stronger chocolate hit so what’s not to like.


6 large free range eggs

8 tablespoons (120 grams) sweetener, I personally prefer to use Sucron or granulated Stevia as it is a bit more natural but use whatever.

2 tablespoons (30 grams) of golden caster sugar, or whatever you have.

3 teaspoons of vanilla paste or extract.  If you prefer use orange or mint extract for a different hit.  You may be able to use less sweetener subject to taste.

4 tablespoons (60 grams) cocoa powder, not drinking chocolate

For the Frosting

4 tablespoons of fat free quark

2 teaspoons of vanilla paste

2 tablespoons sweetener or sugar


Pre-heat the oven to 180°C.

Lightly spray a square, loose bottom brownie tin with one cal oil before lining with greaseproof paper.

Separate the eggs and place yolks in a bow.

Add the remaining brownie ingredients and mix thoroughly.

Whisk the egg whites and gently start to fold into the brownie mixture until well combined.

Place mixture into lined brownie tin and bake in the oven for approx 25-30 minutes.

When cooked place on a cooling rack and remove from tin and paper if possible.

For the Frosting

In the meantime mix all of the ingredients for the frosting.

Once the brownies are cool, if you have managed to resist them, spread a layer of the frosting over the brownie and then cut into 20-25 portions.

Enjoy with fresh strawberries or just as they come.
