Bouncy Black Bomber Cheese, Broccoli and Cauliflower Savoury Smacks

After finely biting the bullet to commit to joining Slimmingworld I decided I needed to get my head around the Syn system so my latest obsession was born. Having read the books from cover to cover about 3 times, I think I have now got my head around it, so here we go. These muffins are packed full of veggies and are gluten free, made with just 60 grams of Black Bomber strong cheese, which considering it makes about 12 muffins, makes them quite light on fat as well. Perfect when you need a good old savoury smack in the mouth! I think this equates to under 2 (1.66 to be exact) Syns per muffin.

INGREDIENTS

3 cups finely grated cauliflower and broccoli (approx 1/2 of a medium cauliflour and broccoli)

2 large eggs

60 grams strong cheddar cheese 12

50g gram flour (chickpea flour) 8

1/2 tsp baking powder

2 – 2.5 tablespoons of mild Madras curry powder

2 teaspoons of onion powder

2 teaspoons garlic powder

1 teaspoon of chilli flakes

A small bunch of fresh chives or spring onions finely chopped

METHOD

Preheat oven to 190 degrees.

Line a cupcake/muffin pan with cupcake liners.

Put the cauliflower, broccoli, eggs, cheese (save some for top) flour, baking

powder, curry powder,onion powder, garlic powder,chilli and chives.

Mix with a large spoon or spatula until

Spoon the batter into muffin cups, about 2/3 full.

You should be able to fill 12 liners. Sprinkle remaining cheese over muffins.

Bake for 25-30 minutes until muffins are completely cooked and no longer wet to the touch.

If desired, garnish with fresh chives before serving.
