WONDERFUL WATERCRESS AND CELERIC SOUP

So yummy you can’t believe how healthy this is leaves all the more calories for a big chocolate melting pot haha. This is inspired by a recipe I saw on Mary Berry’s latest programme but like with most of the recipes here I have tried to make them lighter but still lovely.

INGREDIENTS

2 bags of fresh watercress

A couple of handfuls of fresh spinach

1 small celeriac peeled

1 stick of celery

3 cloves of garlic

2 white onions

1 litre chicken or vegetable stock 9low salt0

2 tablespoons of naturally fat free quark or crème fresh

Black pepper

METHOD

Gently sweat down the onions celery and garlic until softened but not coloured

Add to celeriac and fry for a couple of minutes

Add the stock and bring to boil, cook until celeriac is soft

Allow to reduce slightly to intensify the flavours and make it creamy

Once reduced by about 1/3 add the spinach and watercress and allow to wilt for a couple of

minutes. Don’t cook for too long as it will lose the bright green colour.

Add everything including the quark into a blender and blitz until smooth and deliciously velvety

Season to taste

You could serve it with a variety of toppings such as cheesy garlic croutons, luscious smoked bacon

or just keep it simple with a swirl of créme fresh
