Love it or hate it, silky scrambled eggs on top of a bed of wilted spinach,served on wholemeal toast and Marmite.

I know it sounds weird but it really is delicious and so healthy.

INGREDIENTS

2 organic free range eggs

Half a bag of spinach, fresh or frozen

Slice of wholemeal toast

Marmite

Salt and pepper

METHOD

Wilt the spinach in a nonstick frying pan with a pinch of salt and pepper

Whisk the eggs thoroughly and heat gently stirring frequently until you get creamy, fluffy eggs.

Toast a slice of gluten-free wholemeal bread (for coeliac)

Spread with a thin layer of Marmite.

Layer spinach and eggs on top

Season with black pepper or cayenne pepper

Super healthy start to the day.
