Gluten free plain flour
Semi skimmed milk
Juice of a lemon
Quantities explained below
Crack an egg into a glass and note how far up the glass it goes.
Add same depth of flour.
Add the same depth of milk.
Whisk or blend mixture thoroughly and leave to rest for a while.
Heat 1/2 teaspoon of butter or drop of oil in a small non stick pan.
Pour in a ladle of mixture (depending on size of pan and preferred thickness.
Cook until lightly golden on one side and then flip over and cook on the other side.
In the meantime sprinkle a plate with sweetener (NB it works better with the granulated type rather than powdered).
When the pancake is golden and comes away from the pan easily, slide onto plate and squeeze over a generous amount of lemon juice.
Turn pancake over and repeat with lemon.
Lock the doors, roll up the pancake and stuff your face with one hand whilst making another batch. 😂😂
