Terribly tempting Thai style turkey and courgette burgers

We have all had those days when just nothing but a burger will satisfy our craving for a good old burger. Whether it be in a bun with all the trimmings or served with a nice salad and spicy relish these burgers tick all the boxes whilst being a lot leaner and tastier than takeaway specials.

INSTRUCTIONS

500 g of lean turkey mince

1 large Courgette

1 to 2 cloves of crushed garlic or a teaspoon of garlic paste

Small bunch of fresh coriander

2 tablespoons of Thai red curry paste (shop bought or home-made to taste)

salt and pepper

METHOD

Grate the courgette on a course grater. Put in a clean tea towel and squeeze out all excess liquid.

Mix into the mince together with the curry paste and garlic.

Season with salt and pepper and coriander

Divide mix into 4 large burgers or 8 Mini ones reserving a small piece to fry and test for seasoning.

Adjust seasoning according to taste.

Oven bake or fry with some spray oil in a nonstick pan.

Serve with home-made red onion and pepper salsa and salad

  1. If you are really craving the burger experience slice a ball of half fat mozzarella and place on top of each burger and put them back under the grill until melted.

Toast a soft bun lightly on one side and assemble the burger, cheese, gherkins and salsa in the bun

This is what you call a happy meal!
