Chinese chicken soup

THIS ONE IS ALWAYS A WINNER. LIGHT AND FRESH AND SATISFIES THAT SAVES THE CRAVINGS.

INGREDIENTS

¾ of a litre of chicken stock

3 chicken thighs boneless and skinless

3 cloves of garlic

1 thumb sized piece of ginger

Small bunch of coriander

2 drops of sesame oil

Splash of dry sherry or Chinese rice wine

1 tbsp of tamari or soy sauce

Pinch of white pepper

Small red chilli with or without seeds to taste

Half an onion finely chopped

 

METHOD

Boil the chicken stock

Add the whole chicken thighs

Add all the other ingredients

Allow to boil until chicken is cooked

Add egg and whisk in thoroughly

Serve topped with finely chopped red chilli
