Cooling Yoghurt & Mint Dip

INGREDIENTS

3 tbsp of fat-free yoghurt (Skya is a really good one to use as it’s very thick and creamy)

1 tbsp of mint sauce from a jar or fresh chopped mint if you prefer.

Approximately 1 tbsp of lemon juice (or to taste).

2 tsp of sweetener or sugar (again to taste)

METHOD

Place all the ingredients into a bowl and mix thoroughly. Adjust the quantities to suit your own palate.

This works well with any spicy Indian dish to give a cooling effect. You could change it and use grated cucumber instead of mint for a change.
