Gluten Free Pizza

INGREDIENTS

Gluten free pizza, with sweet and tangy tomato and pepper sauce, crispy bacon, fresh mozzarella, basil and oregano

1 gluten-free pizza base

1 tin of good quality plum tomatoes

1 small onion minced

2 to 3 cloves of garlic (to taste)

2 teaspoons of balsamic vinegar

1 teaspoon of sweetener/sugar

a handful of fresh basil

1 teaspoon dried oregano

1 to 2 jarred red peppers or fresh red pepper (optional)

1 tablespoon tomato purée

 

FOR THE TOPPING

half a red onion finely sliced

handful of cherry tomatoes finely sliced

a few thinly sliced mushrooms

2 slices of good quality lean smoked bacon

a few chunks of fresh mozzarella cheese

small handful of grated hard mozzarella cheese

fresh basil

fresh oregano (optional)

sprinkle of dried chilli flakes (optional)

black pepper

 

METHOD

fry the onions on a gentle heat until lightly caramelised

add the garlic and continue to fry for a couple of minutes

add the tomato purée fry for 1 minute

add the rest of the ingredients for the sauce breaking down the tomatoes and cook on a medium heat until reduced.

Allow to cool down just for a couple of minutes and then top the pizza base

top with the rest of the ingredients and cook for 12 to 15 minutes until the cheese is brown and bubbling click save
