Curried Cauliflower and Cheddar Soup

INGREDIENTS

Small head off cauliflower inc. tender leaves

1 carrot

1 onion

1 stick of celery

2 cloves garlic

1 red chilli (de-seeded or to taste)

1 tbsp mild curry powder

few pinches of saffron

approx 300 ml chicken stock.

Handful of strong cheddar cheese – grated

 

METHOD

Fry off onion, carrot, celery, chilli and garlic for few minutes.

Add curry powder and fry for one more minute

Add the cauliflower, stock and saffron

Bring to the boil and cook until cauliflower soft

Remove from heat and blitz in a food processor/blender or using stick blender stir in the grated cheese and serve with whatever you fancy.

N.B This works just as well with Broccoli and Stilton but I probably wouldn’t bother with the saffron.

 

add everything into a soup maker using the puree option according to the timer.
