A yummy sweet and spicy salsa that goes great with curries and even mixed into cauliflower rice. Would also be nice as a side salad with lots of meats and probably some fish dishes too. The choice is yours at the end of the day.
INGREDIENTS
1 large ripe mango chopped into small cubes.
1 large red chilli or any chilies of your choice
2 shallots finely diced
juice and zest of 1 line
pinch of sugar or sweetener (Opt.)
Small bunch of coriander chopped
METHOD
Mix all the ingredients together in a bowl and leave to marinade until ready to serve.
Just at the lime juice and zest a bit of time and adjust quantities to your liking.
