Saag Bhaji

This quick and simple spinach dish goes great with any curry. The use of frozen spinach and even preprepared ginger and garlic makes this even quicker to prepare. Nice and healthy too. Even Popeye would be proud of this one!

INGREDIENTS

5/6 balls frozen spinach (You can use fresh but you need a lot to equal the quantity of spinach)

1 large onion finely chopped
A thumb -sized piece of ginger or a cube of frozen or even a tablespoon of lazy ginger, it’s up to you.
3 garlic cloves finely chopped, or again a cube of frozen or tablespoon of lazy garlic
teaspoon of coriander powder

METHOD

Stirfry the ginger onion and garlic for a few minutes until the onion is softened and lightly caramelised.

Add the ground coriander

Add the spinach and stir fry for a few minutes until softened and cooked through.

Stir in some fresh coriander (opt)
Season with salt and black pepper to taste.
