Fanta Chicken

This recipe is loosely based on The Slimming World Diet Cola chicken recipe. It tastes a little bit like a spicy sweet-and-sour chicken. I like to serve it with boiled rice.

INGREDIENTS

black bean

3-4  chicken breasts or thighs– cut into strips

330mls of fanta zero (or another diet fizzy orange)

6 tbsp of passata

1 chopped onion

1 tbsp crushed garlic (3 cloves)

1 tbsp finely chopped ginger (large thumb sized piece)

1  chicken stock cube

3 Tbsp white wine vinegar

3 tbsp Worcester sauce

1 tbsp of sweetener

2 dried red chillies crushed

1 tsp dried mixed herbs

1 Red pepper

1 heaped tbsp. cornflour with a small amount of water

fresh pineapple chunks (optional)

 METHOD

Brown off chicken and remove from pan
Add onion and brown off, add garlic and fry for a couple of minutes
Add the fanta zero, the passata, stock cube, vinegar, Worcester sauce, sweetener and chilli, dried herbs
Add any stir fry veg (ie red peppers)

Add cornflour and water a bit at a time

Let it simmer for 20 mins,

Return cooked chicken to the pan and continue to simmer until chicken cooked through.

Add a little bit of sweetener to taste if required

Once cooked add some fresh pineapple chunks (optional)
